Grilled Vegetables with Papaya Pequin Passion Glaze

A simple, flavor-packed vegetable dish for the grill. It makes a great starter or side dish, as well as a satisfying vegetarian main if preferred. By glazing the veggies with our Papaya Pequin Passion Savory Fruit Hot Sauce, the natural sugars of the fruits in the sauce caramelize beautifully on the surface of the veggies, creating some magical grill marks and a nice char flavor, along with some mild chili spice.

Ingredients:

2 medium zucchini
1 large eggplant (or 2 Japanese-style)
2 medium summer/yellow squash
1 red bell pepper
1 orange or yellow bell pepper
4 medium-sized potatoes
1 medium onion
1 bottle Fat Cat Papaya Pequin Passion Savory Fruit Hot Sauce
2 tbsp vegetable or olive oil
salt and pepper
cooking spray

Instructions:

Pre-heat your grill or grill pan over medium heat.

Prepare vegetables.

Cut off the ends of the zucchini and summer squash and slice into quarter-inch-wide rings.

Slice eggplant into quarter-inch rounds

Quarter the onions and separate into individual layers.

Cut the potatoes in half length-wise and par-boil for 8 minutes in salted water.

Cut peppers into wedges or strips two inches wide at most.

Place all the vegetables into a large plastic zip bag, along with 2/3 of a bottle of Fat Cat Papaya Pequin Passion Savory Fruit Hot Sauce, the oil and some salt and pepper. Close the bag and shake vigorously so all the veggies get coated evenly with the sauce and seasonings.

Leave the veggies on the counter for 10-20 minutes while the grill heats up. Once hot, oil grill well (or spray with non-stick spray) and set the veggies out on the grill in a single layer and grill until tender and charred in spots and then flip and repeat on other side, about 5-7 minutes per side.

(Alternately, you can roast the veggies in an oven: Set your oven to 425F. Spread the coated veggies out in a single layer on a foil-lined baking sheet that has been oiled and roast for 20-25 minutes, or until tender and the outside is slightly golden and charred. Flip veggies after 10 minutes.)

Set cooked veggies on a serving platter, drizzle with remaining Fat Cat Papaya Pequin Passion Savory Fruit Hot Sauce and serve.

Note: Feel free to use any veggies you like for this, including tomatoes, butternut squash (par-boil 8 min first) or anything else that can hold up to being grilled.
